Hummus is a household staple in this home. I try to have it around as much as possible as it's a perfectly healthy snack to offer Dom. I can always convince him to eat it, and by convince, I mean make him as happy as possible by giving it as a choice it. Since it costs $3.99 for a measly little tub that we can consume in less than 3 days and even that is stretching it, we have gone for the more wallet friendly approach, and now make it ourselves. David made it the first few times, but I decided to venture forth this time and make it myself.
I rarely follow recipes, at least not precisely, and so I often end up with my own twist. Here is what I came up with yesterday:
1 can (15.5 oz) garbanzo beans
1 can (15.5 oz) cannelloni beans
1-2 cloves garlic, minced - I'm lazy, so I threw the garlic into the processor first and pulsed a few times to mince
1/2 cup tahini paste
1/3 cup lemon juice - fresh squeezed is best, but bottled works, too
1/4 - 1/2 cup water
1/4 cup olive oil
1/2 tsp salt
1/2 tsp ground cumin
a few grinds of freshly ground black pepper
Parsley, paprika, and olive oil for garnish
Place all ingredients into bowl of processor and process until the consistency you desire. Start with 1/4 cup water, and add more to thin mixture, if needed. Taste, and add more salt and pepper and lemon juice, if needed.
Place in serving dish. Drizzle with a little olive oil and sprinkle parsley and paprika on top. Serve with pita or fresh veggies.
Tip: For a less strong garlic flavor, throw the garlic in a pan with some olive oil and sauté it for 1 minute before adding to rest of ingredients!
