Cranberry Cream Cheese French Toast {Recipe}

I remixed the recipe that I had made and posted here last week. With a few additions, it made a perfect lunch for the boys and I. Annnd, it was absolutely delicious, so I figured I'd share it with you. =) So, with the recipe for Cranberry Orange Bread, here is what you do:

1/3 of a loaf of cranberry orange bread, let it sit out overnight to dry out or use it after it's several days old
cream cheese (about 1/4 block)
1 egg
1 TB melted butter, cooled + butter for frying
3/4 cup milk
1/2 TB sugar or other sweetener
1 tsp vanilla
pinch of salt
a dash of cinnamon

  • Whisk together egg, melted butter, milk, sugar, vanilla, salt, and cinnamon until a smooth batter is formed.
  • Slice the bread into 1/2" thick slices, and spread cream cheese on half of the slices. Place the 2nd half of the slices on top of the cream cheese covered onces, creating "sandwiches."
  • Pour part of the batter into a shallow dish, and lay several of the sandwiches in it to soak. After 1 minute, turn over to let other side soak.
  • Melt butter in skillet over medium heat.
  • Remove sandwiches from batter and start frying them. Pour remaining batter in dish, and soak the rest of the bread.
  • Fry the French toasts until crisp and brown, about 1.5 - 2 minutes on first side and an additional minute on the 2nd side.

Serve with powdered sugar or plain.
