CrockPot Veggie Chili {Recipe}


A lovely and super easy meatless meal perfect to throw together during Lent or any time. It's hard for me to say it's chili without the meat, but I'd say this is as close as you're going to get. 

1 yellow onion, diced

2 sweet bell peppers, or 8-10 mini sweet peppers, diced

2 small zucchini, diced

2 medium carrots, diced

3 garlic cloves, minced

1/2 cup sliced mushrooms

1 28 oz can diced tomatoes

1 1/2 cup vegetable stock

2 TB cumin

1 TB chili powder

1 tsp oregano

1 TB paprika

1/2 tsp cayenne pepper

1 15 oz can cannellini beans, rinsed

1 15 oz can kidney beans, rinsed

1 cup frozen corn

Place all ingredients except the frozen corn into a large crockpot (6qt +). Stir well, and cook on low 8 hours or high for 5. In the last 30 minutes, stir in the corn.

Serve with shredded cheese, a dallop of Greek yogurt or sour cream, and cornbread for best results.
