Cranberry Orange Bread {Recipe}

Cranberries are one of my three top ingredients of autumn not including spices. (The other two are pumpkin and apples). This is one of the easiest throw together cranberry recipes. It's easy for little ones to help with, and can be changed in so many ways, and still come out great!

1 cup AP flour
3/4 cup whole wheat flour
2 TB ground flaxseed
1/2 cup sugar + 1 TB
3/4 teas salt
1 1/2 teas baking powder
1/2 teas baking soda
1 cup chopped cranberries
1/2 cup chopped walnuts (optional)
1 egg
2 T all natural applesauce
3/4 cup Orange juice (You can substitute 1/2 cup water + 1/4 cup milk, too)
1 T orange zest

Preheat oven to 350 degrees F.  Grease 9" x 5" loaf pan. (You can use a muffin pan as well - just decrease bake time to 20-25 minutes).

Combine flour, sugar, salt, powder, and soda.

Add the cranberries and walnuts, and stir to coat with flour.

In separate bowl, mix together egg, applesauce, orange juice, and zest.
Pour egg mixture all at once into flour mixture, and stir until JUST blended.

Spoon batter into prepared pan.  Sprinkle 1 TB over the top. Bake for 50 minutes or until toothpick inserted in middle comes out clean.  Cool in pan 10 minutes, then remove to rack to cool completely.

    1. Hooray! I'm so glad it turned out great and was well loved. It's one of my personal favorites. I've done it with fresh raspberries in the summer, too!

      I'm always hesitant to share recipes in case they don't turn out as well for readers. That would make me sad.
